How to make an amazing, simple rocky road

If our Great Vegan Bake Off announcement didn’t get you in the mood to bake but you’re still craving something sweet, Emily-May Yeo has the perfect solution: no-bake rocky road!


Vegan Rocky Road

This could not be simpler and is still super impressive. The perfect snack to whip up and take to parties or to give as a hand-made gift. The fillings are so customisable, feel free to add in whatever takes your fancy!

Makes 16 pieces
200 g dark chocolate

50 g salted pretzels roughly broken

25 g dried cranberries

175 g marshmallows (I used Sweet & Sara)

50 g shredded coconut

  1. Simply melt the chocolate in the microwave until it is smooth and glossy. (Without burning it).
  2. Stir in the remaining ingredients until everything is evenly coated with chocolate.
  3. Pour into a lined rectangle baking tray and leave in the fridge to set.IngredientsRockyRoad
