How to make vegan Christmas Bark

In no time at all you can whip up a delicious, impressive batch of vegan Christmas bark. Perfect for the Christmas table or crumbled into a neatly wrapped box or jar to make a thoughtful, tasty gift!
Vegan Christmas Bark
1 cup white chocolate (e.g. Sweet William brand in Australia)
1 cup pretzels, chopped
½ cup peanuts
½ cup dried cranberries, chopped
½ raw pistachios, chopped
1 lined 20cm x 30cm baking tray
- Firstly, ensure all of your ingredients have been chopped up. I like to have a mixture of finely chopped and chunky pieces in mine but this step is completely up to you!
- Melt the white chocolate in the microwave for 30-40 seconds. This melts quite quickly and an easily be burnt, so keep your eye on it. Give it a stir until it becomes nice and smooth.
- Fold all of the chopped pretzels and peanuts in and most of the cranberries and pistachios (I like to reserve some to sprinkle on the top) until they are coated in the white chocolate. Then, spoon the mixture into the lined baking tray. Spread it out and press it together. You can make a super thick layer or keep it thin. I prefer to make mine about 1-2cm thick.
- Sprinkle over the extra cranberries and pistachios then pop it in the fridge until it hardens. This only takes around 1 hour. Chop it up into rough pieces and pop in a jar with a ribbon and hey presto, simple vegan Christmas bark! The perfect gift or crowd-pleaser at your Christmas get-together!
